Extra Virgin Olive Oil  "Nostrana di Brisighella" 90%


 Type: extra virgin olive oil, Denominazione di Origine Protetta (Protected Origin Classification).
 
Variety: 90% “Nostrana di Brisighella” from olive groves in the approved production zone, registered and certified at the Chamber of Commerce of the Provinces of Ravenna and Forlì. Other varieties account for 10%.
 
Geographical location of olive groves: hillsides surrounding Brisighella, with a preference for those facing south/east.
 
Harvest: from 5th November to 20th December: Milling must take place within 4 days of the harvest: this is compulsory. Harvesting is done manually by stripping the leaves, with the aid of various tools. The nature of the terrain does not allow for use of any mechanised machinery.
Delivery/transport is only permitted in the special containers: crates and boxes which keep the fruit aired.
 
Extraction: the extraction system employs the Sinolea-Rapanelli trickle method.
 
Organoleptic chemical characteristics: the Denominazione di Origine Protetta (Protected Origin Classification) guarantees absolute quality in every way from the olive grove to final bottling.
 
Analytical data of oil: chemical characteristics are always at a level of excellence (as shown on the label).
 
Features exclusive, recognisable characteristics: the aroma is intense and delicate with aspects that bring to mind green artichokes and just-cut grass. Fluid on the palate, the sweet-sour and spicy flavours achieve near-perfect balance and harmony.
 
Serving hints: excellent with all types of fish (especially mullet, turbot and sea bream), but gives of its best when added to and mixed a crudo (i.e. when cooking is over) with the cooking fluids of fish, meat and game where it expresses its full flavour.
